THE CITY (MOSCOW 24): A CAVIAR BAR OPENS AT TSUM

2019-07-05
A caviar bar opens at TSUM
Albino-fish caviar, pre-revolutionary Olivier salad and a baked-apple dessert with black caviar: on 25 June, Caviar Russia Moscow opened at Globus Gourmet in TSUM. Chef and television presenter Andrey Shmakov, also brand chef of SAVVA at the Metropol Hotel, dedicates the new project entirely to one delicacy.

The concept
The new TSUM venue is devoted exclusively to “black gold”, as gourmets call caviar. Almost a hundred black-caviar products from different producers are available to taste and buy: plain, in tasting sets, in dishes and in desserts. Dinners with Russian and international chefs, educational talks by caviar sommeliers and themed tastings are also planned.

Our bar's defining feature is that black caviar, normally used as a garnish, becomes a principal ingredient in its own right.

White black caviar and a surprise set
Visit the bar to discover how traditionally harvested roe differs in taste from roe obtained from live fish and released afterward — spoiler: the former is more delicate. You can also taste rare albino-sturgeon caviar. Begin with Caviar Collection Moscow, featuring four caviars — live-fish, traditionally harvested, sterlet and beluga — for RUB 7,100, or Caviar Collection Gourmet, adding rare golden albino caviar, for RUB 8,700. The Unique Chef's Set is a culinary roulette: ten surprise appetizers, absent from the regular menu, personally prepared by the chef, RUB 13,000 by reservation only. The bar also prides itself on pre-revolutionary Olivier salad with pressed caviar, RUB 2,400. Its most unusual dessert is baked apple with caviar, Batu Khan's favourite treat, RUB 1,600.

What to drink
The new bar's wine list includes more than forty Champagnes from famous houses and small growers, plus a wide selection of vodka and traditional Russian Polugar spirits.
